COOKING ON THE WILD SIDE The purpose of this book is to assemble recipes dedicated to fish, shellfish and game. Other favorites have been added that are cooked frequently by sportsmen, either as entres or side dishes. It s been 12 years in the making, but it s finally here - Cooking on the Wild Side cookbook. I have gathered not only the many recipes I have written over the years, but recipes I ve collected from readers and friends that I feel are well worth your time to try. I love to hunt and fish and have been doing it for more than 30 years. I picked up my first frying pan at the age of four. Unfortunately, it was a plastic frying pan, and I almost burned down my parent s house. All I had to say was, Look Mommy, I cook! I ve come a long way from that day. I have learned that all game - be it fish, fowl or big game - is not created equal and thus, has to be prepared in different manners. When it is prepared correctly, it is memorable. There is something very rewarding about capturing your meal and enjoying it with friends. I have two rules that I hunt and fish by. Never take something that you won t eat. Next, never take more than you can eat. I know people who will go fishing for spots and fill a 48- quart cooler to the top and then some. They get home and try to give some away, but inevitably, more than half get buried in the woods or tossed in a dumpster. This makes me sick, and it is a shame that there are still people out there who kill and overfish just for the sport. Please practice catch and release! I hope you enjoy and use this cookbook. Actually, he put a plastic frying pan on a hot stove burner and nearly caused a fire, but that may be the last thing he's accidentally burned. Not trained as a professional chef, Conti has nonetheless developed a reputation as a top-notch cook of fish and game. He has taught fish and game cooking at fishing shows across the Carolinas and has been co-author of the monthly column Cooking on the Wild Side in North Carolina Sportsman and South Carolina Sportsman magazines for 10 years. He has an extreme love for the outdoors and the things that sportsmen harvest there. Conti, who lives in Wilson, N.C., with his wife, two kids and two dogs, has worked for the Sportsman for 14 years, and has been publisher of the North Carolina Sportsman and South Carolina Sportsman magazine for the past eight years. Cooking on the Wild Side is the product of Ty Conti s decades of cooking delightful dishes from the game and fish that he and his friends have brought home from countless trips afield. The book contains a diverse group of Southern recipes and aims to make preparation and cooking of wild game and fish an easier, more enjoyable task. The idea for the cookbook came from the monthly fish-and-game recipe columns he co-authors in the North Carolina Sportsman and South Carolina Sportsman magazines.
